1kg coarse salt
500g salt
carrots, zucchin,fennel
dill, parsley, potatoes

1. Mix coarse salt with fine salt.
2. Place the fish on the coarse salt and douse with water, wrap the remaining salt and bake in the oven for 35 minutes at 190.
3. You can accompany with a Bearnaise.
